My photo
I live in the Pacific NW with my husband, our 85 pound black lab and the newest member of our family our adorable little boy! I love to cook, stick my hands in the dirt and grow veggies and flowers, etc., craft for gift giving, repurpose things from my grandmother, find a cozy corner and curl up with a good book, and most of all hang out with my boys and our furry one.

Annual 4th in LC

Forth of July's have changed for me over the years.   When I was a kid my grandparents had a huge party at the ranch were upwards of 50 people came every year and now its just the family at the LC cabin.   This year it was very low key which is just what I think we all wanted and needed.

G and I went over with the furry one on Friday after work to spend a couple of days just us.  The weather was gorgeous!   Saturday morning I went for a quick 60 minute massage at Rejuvenation.  I've never been there before but have driven by for years.  It was WONDERFUL.  I will definitely being going back soon.  And the bonus is the prices are very reasonable.   G picked me up and we went up to Salishan for lunch and for G to play 9 holes.

This is the whole that G almost got a hole in one!  It ended up landing about 2 feet from the hole.   If it would of just keep rolling......

That night we ended up back at Salishan for dinner and to hear one of our favorite performers Beth Willis sing at the Attic Lounge.  We love that she plays pretty much just requests and can play just about anything.  It's hilarious to see what people will request.  G sent her a shot of Jaeger and she sang a little Pink Floyd for me.  I took a picture but it didn't really turn out so no picture to post.  Another reason I love to go here is I love the steamer clams that they have. The tomato sauce on this is delish!  This with a side salad that has some  hazelnuts and  little blue....

My martini made with Indio Lemongrass Vodka - yum!

G's burger.....

On Sunday the parentals appeared with Rex in tow!  Mom made a great dinner that night of oven baked chicken, green beans (w/ bacon) and fresh baked croissants.  I forgot to take pictures however but trust me it was delish.

The next day was the big day!

It was nice enough that we could have lunch in the courtyard.  We went with a traditional 4th menu of hot dogs and chips - simple~

That afternoon G and I went for a walk around the neighborhood and down to the bay......

There was a kite boarder on the bay.   I have to say this was amazing to watch.   We saw him get himself all hooked up and ready to go and then head out onto the bay.  Of course with blue sky and sunshine at the beach you get plenty of wind so the conditions were perfect for him.

Our neighborhood has these news trails and so G and I decided to check one of them out.  It was fun but a little creepy and not a walk I would want to take by myself.  As we reached the end of trail and two teenagers ran past us into the woods.....wonder what they were up to?

Here is most of the Q for dinner that night.   I made delived eggs, mac salad, and fruit salad.  On the burger topping plate is lettuce fresh from my garden (about the only thing ready to harvest) as well as some homemade dill pickles.

Macaroni Salad

There is not going to be measurements for this recipe as you will get used to when I post....

Macaroni noodles - however many you have on hand or need
Grated carrot
Black Olives
Salt & Pepper
Mayonnaise (needs to be Best Foods)
Dash of mustard
Chopped parsley

Its a personal preference how much of each you add to your own salad.  If you make this a head of time be prepared to add more mayo later as it will get absorbed.  If it tastes bland add a little more salt (I know, I know, but its not like you are eating this everyday with every meal).  I like to put the mayo in last.   Remember you can always add more mayo but its hard to take out so do be sure to add in small batches.
Other things you could add - hard boiled eggs, dill or bread and butter pickles.

Fireworks that night were really pretty and the great thing is we can see them from the front deck!

All in all another great 4th of July!
