I love to cook, stick my hands in the dirt and grow veggies and flowers, etc., craft for gift giving, repurpose things from my grandmother, find a cozy corner and curl up with a good book, and most of all hang out with my boys and our furry one.

Seconds

I am a big advocate of cook once, eat twice.

Being that I am sequestered to living in a cube 40 hours a week along with a lovely little commute through the country side to get home - the time I have to spend with pickle is limited during the week.  Also, I would like to eat before 8 pm when its hard for me to stay awake past 9:30.

All this being said there is not a lot of time to be spent on the weeknights preparing dinners and this is where cook once, eat twice comes into play.   I am lucky in that my husband does not require a whole redirect of the dinner.  He is perfectly happy to eat the exact same meal twice - we just don't do it two nights in a row.   But sometimes a little redirect is in order.  

Also, lets be honest.   There is just the two of us eating (pickle doesn't count yet) and nice little 9x9 pan of enchiladas is more than enough for two meals - maybe even with a little left over for lunch.

What brings this to mind is that last night we had some lovely steak skewers from the whole paycheck.   They were marinated so the meat just melted in your mouth and had some wonderful peppers and onions on the skewer as well.  G BBQ'd them perfectly.  The pieces of meat were huge however and so luckily there is enough left for Tuesday's nights dinner!   I'm going to do a hash of sorts I think.  I have some potatoes from the farmers market that I will bake tonight and then tomorrow I can cube them and mix them with the leftover steak and veggies. 

Speaking of veggies.....I am zuchninned out and must take a break.  I know I will yearn for it come winter but I need something besides green beans, zucchini, and corn.  I love our little farmers market but the one farmer I trust is a little limited.   So this week I didn't make it to the market and just got some veggies for the week at the market and we hadn't had broccoli in a while and then this came across my plate today......let's hope its a hit!
