Chili Relleno
This is my mom's chile relleno casserole dish. It's perfect for dinner, lunch, or bruch.
1 cup half and half
2 eggs
1/3 cup flour
3 ( 4 ounce ) cans whole green chiles
1/2 pound Monterey Jack cheese, grated
1/2 pound sharp cheddar cheese, grated
`1 ( 8 ounce ) can tomato sauce
Beat half and half
with eggs and flour until smooth. Split
open chiles, rinse out
seeds, and drain on paper towels. Mix cheese and reserve 1/2 cup for
topping. Make
alternate layers of remaining cheese, chiles and egg
mixture in deep 1 1/2 quart
casserole dish.
Pour tomato sauce over the top and sprinkle with reserved cheese.
Bake in 375* oven one hour until cooed in center. Serves 4
Changes I made....I used whole milk instead of half and half. Afterall I have it on hand due to the pickle. I also pour enchilada sauce on the top instead of tomatoe sauce.
This dish is a crowd pleaser for sure. Next time I am going to maybe add more chili's and do more like three or four layers - this time I only did 2.

The big red letter stand for......
......the JELLO family
Do you know the jingle? I apparently know every jingle known to man stuck in my brain. When this will become useful is yet to appear. Remembering children's from my youth however has come in handy but I digress....
Hand foot and mouth disease. Heard of? If you have or have had a child in daycare you are aware of this lovely disease that can spread like wildfire through any daycare.
We had our second scare this week. And when this comes you brace for the worse. So after a trip to the doctors office this week and a diagnosis of yes that probably what this is.....I stopped by the store to stock up on a few things of the soft variety. You see one of the place this where this ever lovely disease can take hold is in the mouth (hence the name) and it can make it a challenge for littles to eat.
One of the things I thought would be good would be jello. And no I did not need to spend 4 dollars for the premade - goodness I could boil some water and get out a bowl.
Or maybe I can't........
You see I made the jello. But I was tired and I took a short cut which apparently was going to bite me in my behind the next day.
I don't have a teapot. I keep my cast oven pot on the stove instead. What am I using a teapot for? I don't drink tea and if I need water I have a microwave. I tell you this because of the first step in making jello - 1 cup boiling water....
Boiling? Does really hot water out of the tap not count? Apparently not.
Lets just say the orange jello I made was watery on the top and you would need a sharp - be that a very sharp - knife to cut whatever that mass was in the button. I tired to spoon some out in a bowl for Pickle and he was less than thrilled. The stuff at the bottom....not sure what that was. Kind of like a jelly fish on steroids.
Didn't matter when it all came down to it. Pickle wouldn't have anything to do with it - but then again can you blame him?
Oh well

Will I actually boil the water next time - hmmmmm lets hope so

Bucket List Update...
Here is my list....
Summer is about half over - although the way the weather is going we could have some warm weather well into the fall!
Wish there was more time to do more things but isn't that always the case. Just trying my best to live in the moment and not try to push things but hope that everything will fall into place in its own time.....
- Dip my feet in the ocean - DONE had a great time w/ Pickle in the ocean when we were at the beach over the 4th of July
- Run through a sprinkler - with Pickle
- Make homemade lemonade or limeade
- Freeze some fruit & veggies
- Sit in the shade on a warm day and read a book
- Take Pickle to the fountains
- Try a new restaurant - DONE tired a new one at the beach - was great the first time and horrid the time we went back
- Meditate more - IN PROGRESS trying to take more breaks at work and go and do a quick meditation in the afternoon
- Go to the Zoo
- Go to a Fair - at least one

Blessed
I have just come back from a week of with my family and it was wonderful.
Some would drill down to parts that weren't as wonderful (like the huge wine stain that currently resides on my driveway) and focus on those but I just consider myself blessed.
Blessed to have a small boy in life who smiles and jumps up and down when he sees me in the morning
Blessed to have a husband who loves me and my family and just happens to be super handsome as well
Blessed to have a job where I can take a week and not worry about what is going on there - it will all be there when I get back
Blessed to have a beach cabin to go to and unwind and recharge
Blessed to have my parents in my life who can then be a part of Pickle's life
It is very easy in the stress of day to day life to get caught up in the small things but really I've learned that things somehow always work themselves out. Maybe not how I would like but maybe that's ok too.
